
Marcia’s Morning Muesli
Here is a quick and simple breakfast, especially if you have blueberries or other small berries on hand. The most time-consuming part of the preparation might just be cutting up the fruit.
Ingredients
- 1/4 cup unsweetened almondmilk yogurt
- 1/4 cup unsweetened soy milk
- 2 teaspoons date sugar
- 1/2 teaspoon cinnamon
- 1/4 cup muesli (preferably with no sugar added)
- 3/4 cup fresh blueberries (or the fresh fruit of your choice)
Instructions
- In a small bowl (not necessarily your serving dish, but it can be), mix together the yogurt, soy milk, date sugar, and cinnamon; then stir in the muesli.
- Let the mixture sit for about five minutes, then transfer to your serving dish (if using), or use your mixing bowl as your serving dish!
- Top with the fruit. Serve.
Notes
This makes a relatively small breakfast. If you need a larger serving, you can easily double the recipe, though you may not need to also double the fruit amount. Up to you! Alternative fresh fruits can be sliced strawberries, sliced or cut up peaches, or even a chopped small apple. If your favorite fresh fruit is not in season, you can use defrosted frozen fruit. Or unsweetened applesauce. Or some raisins. Currently I’m not including Nutrition Facts for this recipe because the application I’m using does not have values for the date sugar or the almondmilk yogurt.
