
Pumpkin Pie Smoothie
Here is a refreshing but comforting smoothie for autumn or any time of year. The base of this smoothie comes from The How Not To Die Cookbook, but I needed to add ice and soy milk so it better resembled my favorite type of smoothie, which is sweet, tall, and frosty. That's how turmeric found its way onto my ingredient list, in case you were wondering.
Equipment
- Blender (High-speed, especially if using dates for sweetening)
- Insulated 12-ounce tumbler (optional)
Ingredients
- 1 cup ice cubes (or about 5 ounces crushed ice, amount is personal preference)
- 1 cup unsweetened plain soy milk (or plant-based milk of your choice)
- 3 Medjool dates, pitted (or other variety of date, about 1.5 ounces or 35 grams)
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon turmeric (optional)
- 1/2 cup canned pure pumpkin puree
- 1 tablespoon almond butter
- 1 frozen ripe banana (cut into 1-inch chunks, the larger the banana, the creamier the smoothie )
Instructions
- If using ice cubes, chop them in a high-speed blender until they get the general consistency of crushed ice. Or just add the crushed ice to a high-speed blender.
- Add the soy milk, dates, pumpkin-pie spice, turmeric (if using), pumpkin, and almond butter. Process until the date bits look like they could pass through a straw.
- Add the banana chunks one or two at a time, processing each addition until smooth.
- Pour into large tumbler and serve immediately.
Notes
You can cut the banana into chunks before or after freezing it, though I perfer to cut it up just before using. After sitting outside the freezer for just a minute or two, it’s easy to cut a frozen banana with a serrated knife — easier, I think, than separating frozen chunks that are stuck together. To freeze whole bananas, wrap in two layers of plastic wrap, then place in freezer gallon bag, then place in freezer. I like to label each banana with the freezing date using some masking tape.
