
Blueberry Overnight Oats
If you're pressed for time in the morning, overnight oats make a great grab-and-go breakfast. It's a breeze to prepare, too. I like to use a pint-sized Ball jar because I think it's fun to layer in some of the ingredients to create a pretty display. But mixing all the ingredients together then dumping them into a 2-cup plastic container works, too. I'm singling out blueberries for this recipe because they make the easiest fruit addition I can think of — just rinse if necessary and measure — no pits to remove, no seeds to extract, nothing to slice or dice. And if you're using frozen blueberries, there's no need to defrost them before using.Of course, if you don't want to use soy milk or almondmilk yogurt, use your preferred unsweetened equivalents.
Ingredients
- 6 ounces unsweetened soy milk
- 2 ounces plain unsweetened almond milk yogurt
- 1/2 cup old-fashioned rolled oats
- 1 tablespoon chia seeds
- 2 teaspoons date sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla
- 1 cup fresh or frozen wild blueberries (regular blueberries OK, too)
Instructions
- In a medium bowl, or in the container you'll be using for storing or eating the overnight oats, mix together the milk, yogurt, oats, date sugar, chia seeds, vanilla, and cinnamon. Stir in the blueberries, unless you want make blueberry layers in your oats. In which case you'd alternate layers of blueberries and oats mixture into your serving container. This might work best if you've let the oats mixture to sit and thicken for about 10 minutes.
- Refrigerate overnight.
- Eat!
